Breakfast Egg Cups - Cherry Tomato & Spinach

It has been awhile soon I've last blogged, and I am so sorry I haven't been blogging, I've been busy ... well being free xD! My flatmates all finished their exams last week so there was a lot of celebrations and then I moved out for good, a couple of days ago, so I've just been settling back at home and haven't had time to blog. 
Anyway, enough rambling, here is a very simple and yummy breakfast for one! Having lived with my flatmates for a year, one thing I've learnt from them is, they never get up past 11 am, if they don't have morning lectures, so I usually I eat alone, and therefore they don't get to eat the stuff I make xD But if you're a nice person, you can always add more ingredients to make more than one, it's really simple :)

 

Ingredients
Egg(s) - I used one, since I was only cooking for one :P
Cherry Tomatoes - I used two, and cut them in half
Spinach - A small handful
Milk - One bottle cap
Salt 
Pepper
Butter / Cooking Spray

Kitchen Utensils
Ramekin(s)
Bowl

Cooking Time! :)
1) Preheat the oven to 200 Celsius
2) Take your ramekin and grease it with butter or cooking spray - Cooking spray actually works really well, it stops it from sticking and making the ramekins hard to clean! Butter works less well, but I guess we just have to make do with what we have :)
3) Take a bowl, and dependant on how many egg cups you want to make, you crack them into the bowl, and whisk them, as if you were making an omelette. 
4) Flavour the egg with a little salt and pepper. If you wish, you can add a little bit of milk to make it more fluffy tasting. I added one cap of milk, so take the milk bottle cap, carefully pour milk into it and mix it in with the egg mixture. 
5) Take the cherry tomatoes, cut them in half, and with a small handful of spinach, mix it in with the egg mixture. 
6) Carefully pour the mixture into the ramekin(s) and place it into the oven for about 20 minutes - When you take it out, it might look like there are still some egg that is uncooked, but that's just the juice from the cherry tomatoes. 




This is so simple to make, and is packed full of nutrients, the perfect way to start your day. I just love how the spinach and tomatoes compliment each other so well. This is exactly why I love cooking with cherry tomatoes, it's so simple, yet so yummy! ^^ Yes I do have a Cravendale towel, isn't it funky :D!
