Sweet Potato Rosti

Let's say Hello to June with a sweet potato rosti ^^ Now that I am home, I've been doing very little cooking, so this time, we're cooking Baba and Katkat style! ^_^ Just like my Baba, I love tasty food, so this rosti is super flavoursome, and is bound to tickle your tastebuds!

Ingredients
Sweet Potato (1 big potato) Makes about 4 


Oil / Cooking Spray - This cooking spray is actually perfection! It's so easy to use, but oil works exactly the same :)

Corn Starch / Potato Starch (1 - 2 teaspoons)

Kitchen Utensils
Small saucepan / frying pan
Mixing bowl

Cooking Time! :)
1) Take your sweet potato and chop it up into small slices. - I know how hard it is to chop up potatoes with a knife, so we advise you to use a cheese grater to slice it up instead, to make it easier. Unless you're like my Baba, a pro at slicing, after all he did use to be a chef!! :P 


2) Place all the slices into a bowl, spoon in two teaspoons of corn starch/ potato starch, and then mix it all together until it has all blended together. 
3) Spray / add the oil to the pan, and set the heat at the lowest setting, to allow for it to slowly cook through, without burning. 
4) Place the shredded potato into the pan, enough to cover the base of the pan, or if you are using a normal pan, dependant on how big you want your rosti, you can place enough to cover the width of the pan, or simply enough for you to eat. - We have a small egg pan, so it was really simple to just cover the base of the pan, and make nice circular rosti's, but it doesn't mean normal pans don't work just the same ^^ In fact, if you're feeling particularly peckish, you can always make a big mahoosive rosti :P!


5) As the rosti cooks, occasionally use a spatula to press the potato down, allowing it to stick. To tell whether it is cooked, when pressing the mixture, it should begin to soften and feel softer. Each side should take around five minutes to cook, but if you prefer it to be a little more cooked / brown (We do! ^^), then spend a minute or so, longer, on each side, before serving it up. Et voila :D!


I love the taste of sweet potato, it's just so sweet, healthy and succulent ^^ You don't even need to add anymore flavouring, it's just that simple! :) My Baba knows the way to my heart so well! I hope you enjoy this as much as we do, happy cooking :D
