Funfetti Vanilla Cake

As part of my flatmate's birthday, I attempted to bake a cake that I had never made before (risky, I know!) but hey, what birthday doesn't have cake! It's criminal not to! :P Here are a few pictures of the birthday cake, I love the candles, it totally compliments the whole cake and the little sprinkles ^^

I think he's just happy because he got cake for his birthday xD!

So, since last year, I've been following Linda Lomelino's tummy-grumbling and amazing desserts, and it all started with Instagram. Her recipes AND her pictures are, for lack of a better word, da bomb :D! So, I came across Linda's recipe called, 6 layer funfetti cake. Even the name is super fancy, how can you resist not making it! 

I'm not going to repeat the recipe here, because it's on Linda's blogspot, and this time I didn't change much, apart from I didn't make the Vanilla Swiss Meringue Buttercream, and just made a normal vanilla buttercream. But it worked well all the same :) I also thought 6 layers was a little too much, so two layers was perfect here ^^

Vanilla Buttercream
Ingredients:
Unsalted Butter (120 g, softened)
Vanilla Extract (1 tablespoon)
Icing Sugar (3 cups, sifted)
Milk (2 tablespoons)

Mixing time :)
1) Place the softened butter in a bowl, and whisk with an electric whisk until there are no more lumps.
2) Add the icing sugar, whisk for a minute.
3) Add the vanilla extract and milk, before whisking for another minute or so, or until the buttercream is thick and stiff enough to spread - Test it out if you're not sure :)

Just before I finish rambling, my buttercream is so wet looking because I whisked by hand, but it turned out okay xD I sandwiched the cake with buttercream and strawberry jam, before sprinkling the edges of the cake with little sprinkles :) I'm just so happy with the rise on the cake! I have NEVER had such a rise before, eeeeeeee this makes me happy hehee :3 Okay, enough talking, enjoy these pictures & enjoy this recipe :D




I'll let you guys in on a secret ... I kind of promised my friend that I'd enter the University Bake Off competition that she's running. Eeeeeeek! I don't know if I will succeed, but I will try nonetheless, it's next week, wish me luck! Hehe :P
