Salt & Pepper, Lemon Salmon, & Potato Bites

Last night I decided that I was going to try something new, something I'd never attempted before, mostly out of fear that it wouldn't taste any good. But, low and behold, it was scrummy! ^^

Usually I cook salmon the usual asian way, soy sauce and black bean sauce. But I've seen a lot of people use lemon juice, they say it takes away the pungent "stink" of the fish away (if you get what I mean xD). So, I drizzled a little lemon juice and put it in the oven, it was yummy yummy and now I shall pass the recipe onto you guys so you can taste the greatness of this dish! :D This recipe also includes how to make the potato bites. 


Ingredients
Salt
Pepper
Lemon Juice
Oil 
Potatoes - I used small new jersey potatoes, but any potatoes work really, it just depends what kind of potato you like :) Also, you can use as many as you like, it all depends on how hungry you are!
Spinach
Cherry Tomatoes
Salmon

SALMON
1) Take the salmon and place it on a piece of foil & if your fish has scales, like mine did, take a knife and carefully scrape it away until there is none left, then rinse it under cold water until the residues of the scales have gone. 
2) Sprinkle salt and pepper all over the salmon - The amount you put on it is all dependant on how flavoured you want it, personally, I'm trying to cut back on salt so I only used half a teaspoon of salt and used the pepper mill sparingly. 
3) Take the lemon juice and drizzle a little on all sides of the salmon - I actually went and brought lemon juice for some baking a few days ago, so I had it in the fridge so I could use it. But fresh lemons work the same, yet again, it depends how tangy you want the salmon to be, so squeeze only as much as you believe is enough. If it helps, squeeze the lemon into a small bowl first, and if it seems too tangy, then add a little sugar and mix it so that the mixture has a consistent flavour.
4) Once that is done, place it into the oven for 15 - 20 minutes. I tend to like my salmon less dry, so I placed mine in for 15 minutes, but 20 minutes should be enough time to create the perfect salmon.

POTATO BITES
1) Take the potatoes and wash them thoroughly. If you do not like the skin then peel the skin away with a peeler.
2) Chop the potatoes into small chunks, the smaller the pieces, the faster it cooks. 
3) Place the potatoes chunks into a oven-able pan (I used my circle cake baking pan xD), sprinkle salt and pepper over the potatoes, so they are well seasoned. Again, this is all dependant on how much you love salt and pepper! :) I like my potatoes creamy tasting too, so I added a small blob of butter, enough to cover most of the potatoes. 
4) Drizzle a little oil onto the potatoes. Then take the pan and shake the potatoes so the oil and the seasoning fully covers all of the potatoes.
5) Place it into the oven for around 20 - 25 minutes. To be extra sure that they are cooked, I would take a fork and poke the potatoes, if the largest chunk of potato is soft, then they're ready to come out of the oven


I normally dress my salmon with rice, because I'm asian like that xD But I had potatoes so I thought, way too many carbs! So I opted for a little spinach and cherry tomatoes, I love cherry tomatoes, especially cooking with them! They really bring out the flavours in food, but that's for another blog :P Anyway, I hope you enjoy this recipe, I could say this is my own recipe, but really, it's just putting simple seasoning together, that anyone could do :)
