Flatbread Pizza - Tomato, Challots, Spinach & Cheese

I woke up so lazy today, I didn't think I would even be able to make breakfast! But I felt like trying something new, so here is something super duper easy, and I think it was yummy, because my sister even gave me the thumbs up today ^^! She's pretty hard to please, second to my muma xD 


I brought flatbread/wrap thingy yesterday, mainly because it was reduced (I love a bargain n_n) and partly because I've never tried it before. But I'm glad I did because it is very easy to use and yummy snack to get you through the day (you can have it for lunch or as a snack, I just felt like something different for breakfast for once :P) Please remember that this is just a way of expressing my food interests to everyone, it may not be to everyones tastes, but there is no harm in trying right ^^? So, feel free to jazz it up to suit yourself, after all, cooking is all about experimenting :)


Ingredients
Flatbread / Wrap
Tomato (1) - This made enough for 1 1/2 wraps, but feel free to use more than one for more servings :P
Shallots (2)
Spinach
Cheese
Tomato ketchup
Cooking oil / spray

Kitchen Utensils
Saucepan / Small pot

Cooking Time! :)
1) Wash the tomato(es) and chop it into small chunks
2) Peel the shallots and cut it into small chunks
3) Oil your saucepan, and cook the shallots for around five minutes (depending on how big the chunks are), before adding the tomatoes, cooking for an additional five minutes. - The tomatoes should start to soften by this point. The idea is to make it into a tomato puree, but I don't have a blender, so it was less puree-y and more chunky. But, I think it made it taste just as good, you get nice chunks of tomato and shallot, which compliments the flatbread so well ^^ 
4) Place the cooked tomato and shallots into a small bowl, then squeeze some tomato ketchup and mix it all together. - How much you squeeze in, is all dependant on how tomatoey you like it to be. I didn't put that much, just one big squeeze was enough, this was so the taste from the tomatoes and shallots wouldn't be lost.



5) Take the flatbread and spread the tomato mixture across it, enough to cover it.
6) Sprinkle some spinach and grated cheese on top, before placing it under the grill, until the cheese has completely melted. - I didn't put that much cheese, mainly because I was too lazy to grate it, and I don't like grating cheese, I always have this impending thought that I'll grate my finger one day xD 


You can probably tell by now that I love cooking with tomatoes, especially cherry tomatoes. Shallots are my second favourite food to cook with, I just love the flavours! Om nom nom ^^ Anyway, I hope you enjoy this as much as I did. Since you're working with wraps, you can always just roll this up to eat, which is easier, since you won't be dropping the food all over the place! :) Happy eating :D
